Crock Pot Chicken Taco Chili

RATING: Five Stars!!! We tried this recipe last night and it was awesome!!! Sooooo easy in the crockpot, the house smelled great and it is relatively low in salt if you use the taco mix recipe below and drain and rinse the beans.

1 onion chopped
1 16 0z can black beans
1 8oz can tomato sauce
10 oz package frozen corn
2 14.5 oz cans diced tomatoes with chilies
1 packet taco seasoning (for salt/msg free taco seasoning see BELOW)
1 tbsp cumin
1 tbsp chili powder
3 boneless skinless chicken breasts
Chili peppers, chopped (optional)

Combine beans, onion, chili peppers, corn, tomato sauce, tomatoes, cumin,
chili powder and taco seasoning in a slow cooker. Place chicken on top and
cover. Cook on low for 10 hours or on high for 6 hours. Half hour before
serving, remove chicken and shred. Return chicken to slow cooker and stir in.

INGREDIENTS (Nutrition)

* 6 teaspoons chili powder
* 5 teaspoons paprika
* 4 1/2 teaspoons ground cumin
* 2 1/2 teaspoons onion powder
* 2 1/2 teaspoons garlic powder
* 1 1/2 teaspoons cornstarch
* 1/8 teaspoon cayenne pepper


DIRECTIONS

1. In a jar with a tight fitting lid, combine chili powder, paprika, cumin, onion powder, garlic powder, cayenne pepper and cornstarch. Close lid securely, and shake well to mix contents. 7 teaspoons is equivalent to 1 (1.25 ounce) package of taco seasoning.
