ROLO Cookies

RECIPE:  ROLO COOKIES

2-1/4 cups flour
1 teaspoon baking soda
1 cup sugar OR SPLENDA
1 cup brown sugar
1 cup butter, softened
2 teaspoons vanilla
2 eggs
1 (9-ounce) package Rolo candy
1 cup nuts, chopped
1 tablespoon sugar

In a large bowl beat the sugars and butter until light and
fluffy. Add the vanilla and eggs. Beat well.

Add the flour and baking soda and blend well.

Cover and refrigerate the dough for at least 3 hours.

After chilling, roll 1-teaspoon of the dough to form a ball,
then press a Rolo into the ball, covering it completely.

Flatten the bottom of the cookie and press the
rounded top into a mixture of the chopped nuts
and a tablespoon of sugar.

Place the cookies, nut side up, on an ungreased cookie sheet.

Bake at 350-degrees for 9 minutes.
