Teriyaki Baked Salmon

Teriyaki Baked Salmon:

1/4 cup Teriyaki sauce
3/4 cup of Paula Deen's Peach Dressing
1 teaspoon garlic, minced
2 teaspoons onion, minced
4 packs of Stevia
1 teaspoon ginger
2 tablespoons ketchup
2 teaspoons lemon juice
1 pound salmon filet


Marinate salmon fillets for a minimum on one hour. Leave marinade in baking dish and cover with aluminum foil. Bake at 375 degrees fahrenheit for 15 minutes or until it flakes apart with a fork.

Fish Haters Spice Blend

Fish Haters Blend:

1 tblsp each savory, thyme, fennel,
sage, marjoram, bay leaf, chopped chives, onion flakes.
Mix and use in 1/2 teaspoon amounts.

Thyme- & Sesame-Crusted Halibut

Quickly roasting fish at high heat keeps it moist and succulent. The
thyme-and-sesame crust gives this halibut a distinctive finish.

Servings: 4 servings

Ingredients:

Thyme- & Sesame-Crusted Halibut
2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
1 clove garlic , minced
Freshly ground pepper to taste
1 1/4 pounds halibut or mahi-mahi, cut into 4 portions
2 tablespoons sesame seeds
1 1/2-2 teaspoons dried thyme leaves
1/4 teaspoon coarse sea salt or kosher salt
Lemon wedges

Steps:

1: Preheat oven to 450°F. Line a baking sheet with foil.

2: Mix lemon juice, oil, garlic and pepper in a shallow glass dish. Add fish
and turn to coat. Cover and marinate in the refrigerator for 15 minutes.

3: Meanwhile, toast sesame seeds in a small dry skillet over medium-low
heat, stirring constantly, until golden and fragrant, 2 to 3 minutes.
Transfer to a small bowl to cool. Mix in thyme.

4: Sprinkle the fish with salt and coat evenly with the sesame seed mixture,
covering the sides as well as the top. Transfer the fish to the prepared
baking sheet and roast until just opaque in the center, 10 to 14 minutes.
Serve with lemon wedges.

Cajun Tuna Burger

1 teaspoon olive oil
3 tablespoons green peppers -- diced
3 tablespoons red peppers -- diced
3 tablespoons green onions -- diced
2 teaspoons capers
2 teaspoons Cajun spice
7 ounces tuna in water, canned
1/3 cup bread crumbs -- plain
1/2 teaspoon Tabasco sauce

1. Heat oil in sauté pan.

2. Add green and red peppers. Sauté for two minutes. Add green onions
and
sauté for one minute. Add capers and spice.

3. Mix tuna and bread crumbs in bowl. Add ingredients from sauté pan.
Mix
together.

4. Mold into burgers, 1 per serving. Cook burgers in non-stick pan or
griddle just until lightly browned and hot throughout, turning once.
