Diabetic Pepper Steak Stew

1 pound lean round steak, cut into pieces
2 1/2 cups green bell pepper, coarsely chopped
1/2 cup onion, chopped
3 cups raw potatoes, diced
1 (12 ounce) jar fat free beef gravy
1/4 teaspoon dried minced garlic
Spray crock pot with butter-flavored cooking spray. Add steak
pieces, green pepper, onion and potatoes and stir to combine.
Stir in gravy and garlic. Cover and cook on LOW for 6-8 hours.
Mix well before serving.
Exchanges: 2 Meat, 1 Starch, 1/2 Vegetable
2 Protein, 1 Vegetable, 1 1/2 Bread, 1/4 Slider, 5 Optional

Crock Pot Beef 'n Peppers

2 lb. lean round steak
2 green peppers, thinly sliced
2 tbsp. dried onions or ½ of a fresh onion finely chopped
1 c. beef broth
2 tbsp. low sodium soy sauce
½ tsp. ground ginger
1 clove garlic, minced
1 tsp. Worcestershire sauce
1. Cut the steak into serving size pieces. If you want you can brown the
meat in a small amount of hot oil before adding it to the crock pot.
2. Place the sliced pepper rings in the bottom of the crock pot,
reserving a few to place on top of meat.
3. Arrange the meat on top of the pepper being careful not to stack
one piece directly on top of another.
4. Mix all other ingredients and pour over the meat and peppers.
5. Cover and cook on low for 8 - 10 hours or on high for around 4 hours.
6. Serve with mashed potatoes and vegetables.

Ethel's Stuffed Peppers 4-6 hours
There are so many different recipes for these, some have rice in them, some have corn in them and some even have cheese in them. Mine are just plain old Stuffed Peppers. I don't measure too terribly much, but here goes.
Stuffed Pepppers
4 to 6 green peppers, cleaned but left whole
1 1/2 lb good hamburger
1 sleeve of saltine crackers crushed
1 egg
salt
pepper
1 lg can tomato sauce (not spiced like for spaghetti)
1/2 C chopped onion
Mix the above 7 ingredients, it should not be too stiff, if needed you could add a little water if you don't have enough tomato sauce. Stuff your peppers, either bake in the oven at 350 degrees for about one hour or throw in the crock pot all day on low or 4 to 6 hours on high. When I put them in the crock pot, I like to put a can of bought tomato soup down over them, then serve them with mashed potatoes.
My hubby likes these a lot.

Creamy Orzo with Peppers

1 cup orzo
1/2 cup roasted red pepper -- diced
4 ounces green chiles -- canned
1 cup sour cream -- light preferred
1 cup shredded mozzarella cheese
1. Preheat oven to 450 degrees.
2. Cook orzo in a pot salted boiling water until tender, about 8 - 10
minutes. Drain.
3. Meanwhile stir together the red peppers, green chilies and sour
cream.
Add orzo and stir well. Stir in mozzarella cheese quickly.
4. Place orzo in a shallow greased baking dish. Bake in oven until hot
and
beginning to turn golden, about 10 - 15 minutes.
