Creamy Orzo with Peppers

1 cup orzo
1/2 cup roasted red pepper -- diced
4 ounces green chiles -- canned
1 cup sour cream -- light preferred
1 cup shredded mozzarella cheese

1. Preheat oven to 450 degrees.

2. Cook orzo in a pot salted boiling water until tender, about 8 - 10
minutes. Drain.

3. Meanwhile stir together the red peppers, green chilies and sour
cream.
Add orzo and stir well. Stir in mozzarella cheese quickly.

4. Place orzo in a shallow greased baking dish. Bake in oven until hot
and
beginning to turn golden, about 10 - 15 minutes.
