Asian Beef and Noodles

Asian Beef & Noodles

8 oz. hamburger or turkey, ground
1/2 cup thinly sliced green onion [or regular one
1 1/2 cups water
1 [3oz.] pkg. Oriental flavor instant Ramen noodles
2 cups frozen Oriental stir-fry veg. mix thawed o
whatever veggies you have on hand
1/4 tsp. ground ginger

In a large skillet sprayed with butter-flavored cooking spray, brown
meat
and 1/4 cup onion. Stir in water, Ramen noodles & seasoning packet. Add
vegetable mix & ginger. Mix well to combine. Lower heat, cover and
simmer
for 10 min., stirring occasionally.
When serving, top each with 1 tbs.
green
onion. The veg. are 1/2 of a 1 lb. bag.

If you need you could cut that
down
to 1 cup. Use what ever onion you have at home. I don't put the green
onion
on at the end and I use regular onion or onion flakes. This is really
good..

Thai Pasta Salad With Peanut Sauce

THAI PASTA SALAD WITH PEANUT SAUCE -- Serves 2
  • 1/4 cup evaporated skim milk
  • 4 1/2 tsp creamy peanut butter
  • 4 1/2 tsp finely chopped red onion
  • 1 tsp lemon juice
  • 3/4 tsp brown sugar
  • 1/2 tsp reduced sodium soy sauce
  • 1/8 tsp crushed red pepper
  • 1/2 tsp finely chopped fresh ginger
  • 1 cup hot cooked whole wheat spaghetti
  • 2 tsp finely chopped green onion
Combine milk, peanut butter, red onion, lemon juice, sugar, soy sauce and red pepper in medium saucepan.

Bring to a boil over high heat, stirring constantly. Boil for 2 minutes, stirring constantly.Reduce heat to medium low.

Add ginger; blend well. Add spaghetti; toss to coat.

Top servings evenly with green onion and serve immediately.
