I
used a dry rub instead of marinating, which gave the steaks a

Onion Stuffed Sirloin with Mushroom Saute
Onion Stuffed Sirloin with Mushroom Saute
2 servings
Prep: 20 minutes
Grill: 14 minutes
Ingredients
1/2 of a small onion, thinly sliced and separated into rings
1 clove garlic, minced
1 tablespoon margarine or butter
1/8 teaspoon lemon-pepper seasoning or pepper
1 8-ounce boneless beef top sirloin steak, cut 1-1/2 inches thick
3/4 cup sliced fresh shiitake or other mushrooms
1 tablespoon margarine or butter
1 teaspoon cornstarch
1 teaspoon Worcestershire sauce
1/2 teaspoon instant beef bouillon granules
1 tablespoon dry red or white wine
Directions
1. For stuffing, in a small saucepan cook the onion and garlic
in margarine or butter until onion is tender but not brown.
Remove from heat. Stir in the lemon-pepper seasoning or pepper.
Set aside.
2. Make a pocket in the steak by cutting a deep horizontal slit.
Spoon the stuffing into the pocket. If necessary, secure opening
of the pocket with a wooden toothpick.
3. To grill, place steak on the rack of an uncovered grill.
Grill directly over medium-hot coals to desired doneness,
turning once. (Allow 14 to 18 minutes for rare, 18 to 22
minutes for medium, or 24 to 28 minutes for well-done).
4. Or, to broil, place steak on the unheated rack of a broiler
pan. Broil 4 to 5 inches from the heat to desired doneness,
turning once. (Allow 14 to 18 minutes for rare, 19 to 22 minutes
for medium, or 23 to 28 minutes for well-done).
5. Meanwhile, for mushroom sauce, in a small saucepan cook the
mushrooms in margarine or butter until tender. In a small bowl
stir together the cornstarch, Worcestershire sauce, bouillon
granules, and 1/2 cup water. Carefully add to the saucepan.
Cook and stir until thickened and bubbly. Cook and stir for
1 minute more. Stir in wine. To serve, cut steak in half.
Transfer steak halves to individual plates. Pour sauce over
steak. Makes 2 servings.
Menu Suggestion: Grill new potatoes to round out the meal.

Beer Stroganoff
Beef Stroganoff
Please rate this recipe.
Ingredients
1-1/4 lbs flank, strip, rib eye, skirt or lean sirloin steak
1-1/2 tbsp canola oil
1 medium onion, chopped (about 2 cups)
1 lb mushrooms, sliced (about 4 cups)
1-1/2 cups defatted chicken stock
4 tbsp tomato paste
2 tbsp Dijon mustard or more to taste
1/2 tsp Worcestershire sauce or more to taste
Salt and freshly ground black pepper to taste
2 tsp sugar, optional
2 tbsp heavy cream
1/4 cup chopped fresh parsley for garnish, optional
Preparation
Remove fat from meat and slice into thin strips about 1/4 inch thick. If using flank steak, slice across the grain. Place 1/2 tbsp oil in a nonstick skillet and brown a few slices at a time on high heat, adding more oil as needed. Do not overcook; the meat should be juicy and slightly rare. As soon as the meat is browned, remove from the pan. Continue to brown all meat slices in this manner. Add onions and sauté until transparent, about 10 minutes. If the pan seems too dry, add about 1/4 cup water to prevent burning.
Add mushrooms and cook for a few minutes. Pour in chicken stock. Add tomato paste, mustard, Worcestershire sauce and salt and pepper to taste. Mix thoroughly, scraping the bottom of the pan to incorporate all of the browned bits into the sauce. Cook for 5 to 6 minutes to reduce the sauce and slightly thicken it. Taste. You may need to add sugar and a little more Worcestershire sauce or mustard. There should be a delicate blend of flavors. Return meat to sauce and add cream. Cook for 2 to 3 minutes without boiling to rewarm meat. Taste for seasoning again.
To serve: Place cooked egg noodles on each plate and serve stroganoff over noodles. Sprinkle with parsley.

Southwestern Beef

Southwestern Beef
1 onion, chopped
2 1/2 lb. or so beef roast, trimmed of fat but left whole (I used a rump roast)
1 heaping tsp. chili powder
1 heaping tsp. garlic powder
1 heaping tsp. cumin
1 heaping tsp. Kosher salt
2 bell peppers (you can use 2 green bell peppers or mix it up a little with red, yellow, or orange; just make sure one is green. I only used 1 green), chopped
1 14 1/2 oz. can Mexican-style diced tomatoes OR 1 can of Rotel tomatoes (regular or mild, depending on your preference)
Small flour tortillas
Desired toppings: salsa or pico-de-gallo, guacamole, sour cream, shredded cheese, chopped cilantro, etc. (I just did pico and guac)
Place chopped onion in the bottom of the slow cooker.
Combine seasonings in a small bowl and then rub seasoning mixture all over the roast. (I had some leftover) Place roast over onions, top with chopped peppers,
and then pour the canned tomatoes on top of everything.(I just spooned mine over the roast) Cook on high for 5-6 hours or low for 8-9 hours then shred the meat with two forks. Then serve with desired toppings!
FREEZER MEAL INSTRUCTIONS: Place tomatoes in the bottom of a freezer safe container. Place green peppers on top of tomatoes, then the seasoned roast, then the onions. When ready to cook, invert the container so the tomatoes are on top and cook 1-2 hours longer than the original recipe states. Or make ahead and freeze the cooked meat.

Marinated Flank Steak
(Makes 4-6 servings)
2-3 pound flank steak or London Broil
2 T balsamic vinegar
2 T fresh lemon juice
1 T Dijon mustard
1 T Worcestershire sauce
1 T finely minced fresh garlic
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. dried thyme
1 tsp. smoked paprika or paprika
1/4 cup olive oil
Combine balsamic vinegar, lemon juice, Dijon, Worcestershire sauce, garlic, and spices, then whisk in olive oil.
Trim the flank steak so there is not a lot of visible fat. Then make small scores about 1/4 inch deep and 1/4 inch apart on both sides of the meat. (This allows the marinade to penetrate more, but it's optional.) Place meat in a ziploc bag, using the smallest size you can fit it into. Pour marinade mixture over meat, then marinate in refrigerator 8-24 hours.
To cook, take meat out of the refrigerator, drain off marinade, and let it come to room temperature while you preheat grill to high heat. (you can rinse the bag in warm water if your in a hurry.) Turn grill to medium-high or let coals cool down before you put the meat on. If using a meat thermometer , cook to a temperature to 130F. If using instant read meat thermometer, start checking temperature after you turn the meat and cook to 130F. I turned the meat after about 6 minutes, and my flank steak reached this temperature in about 11 minutes, but cooking time will depend on how hot the grill is, the size of your steak, and the temperature of the meat when you start. The meat will continue to cook as it rests, so it's best to remove from the grill when it's underdone rather than overdone.
When meat reaches that temperature remove from the grill and let rest 5-10 minutes for smaller pieces or 10-15 minutes for larger pieces. Cut meat into thin slices across the grain and serve immediately.

Chimichangas
Rating-5
Healthy Exchanges Food Newsletter, October 1997, pg. 7. This were excellent. However, I put a half cup of meat mixture per one tortilla and only used 4 tortillas instead of 8. This brought down the starch exchanges. And they were awesome. I made them with Whole Wheat La Tortillas, that were only 50 calories per a tortilla.
Chimichangas
Source of Recipe
JoAnna M. Lund
Recipe Introduction
These are as authentic as any chimichangas found in any Mexican restaurant in any town in America! I often wonder if other cultures shake their heads in disbelief on how we American can totally change their traditional foods or if they ask, "Why didn't we think of that?"
List of Ingredients
- 8 ounces ground 90% lean turkey or beef
- 1/2 chopped onion
- 1/2 teaspoon minced garlic
- 1 cup chunky salsa (mild, medium or hot)
- 1 teaspoon JO's Chili Seasoning
- 8 (6-inch) flour tortillas
- 1/4 cup Land O Lakes no-fat sour cream
Instructions
- Preheat oven to 475 degrees. Spray a 9-by-13-inch baking dish with olive oil-flavored cooking spray. In a large skillet sprayed with olive oil-flavored cooking spray, brown meat and onion. Stir in garlic, 1/2 cup salsa, and JO's Chili Seasoning. Lower heat and simmer for 5 minutes. Spoon 1/4 cup meat mixture into center of each tortilla. Fold 2 sides over filling, then fold ends into center. Place seam side down in prepared baking dish. Lightly spray tops with butter-flavored cooking spray. Bake for 12 to 14 minutes or until golden brown. For each serving, place a chimichanga on a serving plate, spoon 2 tablespoons salsa and 1 tablespoon sour cream over top.

Southwest Skillet Ragu
In this recipe, we throw the dry pasta into the meat sauce toward the end instead of cooking it separately. This allows the pasta to absorb the flavors of the sauce and also releases starch into the sauce, which helps thicken the sauce and pull everything together. If you find you don't like this texture, feel free to cook the pasta separately and add it at the very end along with the cheese!
Southwest Skillet Ragu
Serves 6-8
1 – 1.5 pounds of ground beef
1 large onion, chopped
1 red (green, orange, or yellow) pepper, chopped
1/2 container mushrooms quartered
1 28-ounce can diced tomatoes with juices
2 tablespoons chili powder
1 tsp cumin
1/2 teaspoon salt (plus additional to season to taste)
1/2 tsp cayenne (optional)
1 cup elbow macaroni
1/2 cup water (as needed)
1 cup shredded cheddar cheese
Heat a teaspoon of olive oil over medium-high heat in a wok or skillet that will be deep enough to hold everything. Add ground beef and cook until no longer pink (about 8 minutes).
Stir in the onions and mushrooms, and cook until the onions are soft and slightly translucent (about 5 minutes). Add the peppers, spices, and salt, and continue to saute until veggies are mostly cooked (about 3 minutes).
Add tomatoes with their juices and bring to a boil. Add the pasta. Let the water come back to a boil and then reduce the heat. Allow everything to simmer for about 10 minutes until the pasta isel dente and the veggies are cooked through. (If it looks like the liquid is gone before the pasta is cooked, pour in another half cup of water.)
Sprinkle the cheese over the top and stir until the cheese is melted and gooey. Spoon into individual bowls, top with an extra sprinkle of cheese, and serve!
