Spiced Citrus Sweet Potatoes with Cranberries


Using a slow cooker makes these sweet potatoes simple to prepare and keeps them out of the way during other holiday cooking.

Ingredients:
  • 9 cups peeled and cubed sweet potatoes
  • 1 can pineapple in juice (drained and reserve juice)
  • 1 1/2 cups cranberries or currants
  • 1- 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons vanilla
  • 4 tbsp agave
  • 1/3 cup pulp free orange juice (unsweetened)
  • 1 tsp finely grated orange peel
  • 1/2 cup or more chopped walnuts
Directions:

Spray interior of slow cooker with nonstick cooking spray. Place sweet potatoes and cranberries in a slow cooker. Place remaining ingredients, except and walnuts, into a small mixing bowl and stir well to combine. Pour mixture over cranberries and sweet potatoes. Cook covered, on high, for 4 hours or on low for 6 hours. Before serving, stir in walnuts. Serve warm.

Magic* National Treasure Bean Soup


Steaming bowl of beans in hand, The Husband turned to me and said,
“These are a national treasure.” Whether you choose pinto, navy
or great northern beans this easy recipe will earn you raves.

It’s a highly nutritional dish that fits most any budget. Use a left
over ham bone or omit meat ingredients for a totally vegetarian dish.

1 pound dry pinto, navy or great northern beans
2 – 3 bay leaves
4 – 6 cloves garlic
1 tablespoon coarsely ground pepper
½ bunch of parsley – about 1 cup, stalks and all (I dice for the crockpot)
2 carrots
2 stalks of celery
1 medium yellow onion
4 – 8 ounces pork “ends and pieces”
¼ cup apple cider vinegar (I omit-I don't feel it needs it)
Salt 1 teaspoon
1 sweet onion
Hot sauce (I prefer “Crystal Sauce”)

Pick through the dry beans for stones. Place the beans in a Dutch oven,
cover with fresh cold water and soak for 8 hours.

In a section of cheese cloth place bay leaves, pepper corns, garlic clove
and the parsley. There is no need to peel the garlic. You may need to fold
or wad the parsley to make a nice bundle. Fold the sides of the cheese cloth
over the seasonings and roll up. Secure your bundle with a clean cotton string.
Tip: if you’ll start with the bay leaves and work in order, the pepper corns
won’t roll away.

Wash the carrots, celery and yellow onion. No need to peel, these will be
removed when the beans have cooked. No need to chop, just break the vegetables
that are too long to fit easily into the Dutch oven.

Place the carrots, celery, yellow onion, seasoning bag and pork in the bottom
of a Dutch oven or slow cooker. Drizzle the olive oil on top. Drain and rinse
the beans and add them to the pot. Cover with fresh cold water to a scant inch
above the beans. On a stove top, turn the heat on high. Without allowing the
pot to come to a boil, immediately reduce the heat to a slow simmer when the
water is about to boil. Place lid on top, slightly askew to vent some steam
and cook until tender; between 3 and 6 hours depending on the simmer. In a
crock pot, cook on low for 10 – 12 hours until tender and creamy.

If you’re serving the beans over rice, approximately 30 minutes before the beans
are finished, prepare according to package directions. Peel and chop the sweet
onion.

When the beans are cooked, remove the seasoning bag and vegetables. Add salt if
you like. Add ¼ cup of vinegar wait a minute or two, taste and adjust to your
liking.

Serve the beans with or without the rice. Garnish with a hand full of sweet onion
and a few dashes of Crystal Sauce.

These beans taste even better the following day

Tip: Do not add salt or vinegar to your beans until they have finished cooking.
Acidic ingredients cause bean skins to become tough during cooking.

Asian Chicken 8 hours

Asian Chicken

Ingredients:
1 green pepper, cut into stips
1 yellow pepper, cut into strips
1 onion, chopped
2 cloves garlic, minced
1 8-oz. can sliced water chestnuts, drained
1 4 1/2-oz. jar whole mushrooms, drained
1/2 tsp ground ginger
4-6 boneless chicken breasts
4 Tbs hoisin sauce
1 tsp cayenne pepper

Directions:
Place red pepper, green pepper, yellow pepper, garlic, water
chestnuts, mushrooms and ginger in stoneware; stir to blend. Place
chicken
breast on top of vegetables. Drizzle hoisin sauce over top of chicken
and
sprinkle with cayenne pepper. Cook on Low for 8 hours or High for 4
hours.

Mexican Meatballs 4-6 hours

Mexican Meatballs

Why should healthy food be bland and uninteresting when there are so many
easy and delicious ways to prepare it with sparkle and sizzle? This has a
sweetly smoky barbecue flavor, but instead of spending hours scrubbing the
grill, cleanup will be a breeze.
Serves 6 (4 each)

16 ounces extra lean ground turkey or beef
21 small fat-free saltine crackers, made into fine crumbs
1/2 cup frozen whole-kernel corn, thawed
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped onion
2 teaspoons chili seasoning
13/4 cups (one 15-ounce can) Hunt's Tomato Sauce
1 tablespoon Brown Sugar Twin
1 teaspoon dried parsley flakes

In a large bowl, combine meat, cracker crumbs, corn, green pep­ per, onion,
chili seasoning, and 1/4 cup tomato sauce. Mix well to combine. Form into 24
(l-inch) balls. Evenly arrange meatballs in a large skillet sprayed with
olive oil-flavored cooking spray and brown for 2 to 3 minutes. Place
meatballs in a slow cooker container sprayed with olive oil-flavored cooking
spray. Stir Brown Sugar Twin and parsley flakes into remaining tomato sauce.
Evenly spoon sauce over meatballs. Cover and cook on LOW for 4 to 6 hours.
When serving, evenly spoon sauce over meatballs.

HINTS: 1. A self-seal sandwich bag works great for crushing crackers.

Thaw corn by placing it in a colander and rinsing it under hot water for 30
seconds.

Slow Cooker Mashed Potatoes 4-4 1/2 hours


Ultimate Slow Cooker Mashed Potatoes

  • 5 lb baking potatoes, peeled, cut into 1-inch chunks
  • 1 1/2 cups chicken broth
  • 1/4 cup butter, cut into chunks
  • 1 cup sour cream (I used light sour cream)
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper, if desired (I left this out)
  • 1/2 to 1 cup milk, warmed
  1. In 4- to 5-quart slow cooker, place potatoes, chicken broth and butter.
  2. Cover; cook on High heat setting 4 hours to 4 hours 30 minutes or until potatoes are tender.
  3. Add remaining ingredients except milk. Mash, crush or smash potatoes using potato masher, or beat with electric mixer on low speed until well blended. Do not overmix. Stir in enough milk for desired creamy consistency.
  4. Cover and keep warm on Low or Warm heat setting until serving time, up to 2 hours. Stir before serving and you may need to mix in additional milk if potatoes have stiffened while on the warm or low setting.

Crock Pot Cream Cheese Chicken 7 hours

Directions:

Prep Time: 20 mins

Total Time: 7 1/2 hrs

  1. Place chicken pieces in crock pot and sprinkle Italian seasoning over chicken. Sprinkle with 2 tablespoons melted butter.
  2. Cook on low for 4-6 hours.
  3. Melt 2 tablespoons butter in a sauce pan and saute onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth.
  4. Add this mixture to crock pot and cook on low for an additional hour.

Slow Cooker Turkey Breast 8 hours

Slow Cooker Turkey Breast

This ultra-simple recipe for slow cooker turkey is going to surprise
you! It comes out so moist and flavorful, you may decide this is the
only way to fix turkey from now on. And don’t worry. You will have
lots of liquid to make gravy if desired. Keep this recipe handy. It’s one you’ll want to use all year round.

1 6-pound, bone-in turkey breast
1 tablespoon butter, softened
1 1-ounce envelope dry onion soup mix

Rinse the turkey breast and pat dry. Leave the skin covering the
breast. Rub onion soup mix all over outside of the turkey and under
the skin. Smear butter on the bottom and sides of the slow cooker.
Place turkey breast in the slow cooker, skin side up. Cover and
cook on High for 1 hour, then set to Low and cook for an additional
7 hours. Remember that each time you remove the lid for a peek you
will need to add another 20 minutes to the cooking time. Curb the
urge and don’t lift that lid.

Servings: 6.

Roast Crock Pot Chicken 10 hours

Roast Crock Pot Chicken

5 lbs chicken
olive oil flavored cooking spray
seasoning salt
chopped onions
garlic
aluminum foil

Directions

Spray chicken with olive oil spray.
Sprinkle with seasoned salt.
Insert onion and garlic inside cavity of chicken.
Spray inside of crock pot with Pam.
Roll wads of aluminum foil into balls and place in bottom of crock pot.
Put chicken back side down on top of aluminum balls.
DO NOT ADD WATER OR ANY LIQUID.
Cover and cook on low for about 10 hours.
Skin will actually turn brown as in a deli roasted chicken.

Pumpkin Tea Bread 2-1/2 to 3-1/2 hours

½ c. oil
½ c. sugar
½ c. brown sugar
2 beaten eggs
1 c. canned pumpkin
1½ c. sifted flour
½ tsp. salt
½ tsp. cinnamon
½ tsp. nutmeg
1 tsp. soda
1 c. chopped walnuts

Blend oil and two sugars. Stir in beaten eggs and pumpkin.
Sift dry ingredients together. Add and then stir in nuts.
pour batter into greased and floured 1 lb. 10 oz. coffee can.

Place can in crock pot. Cover top of can with 6-8 paper towels;
place lid on top. Bake on high 2½ - 3½ hours. No fair peeking
until last hour.

8 ounces extra lean ground beef or turkey
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup (one 2.5 ounce jar) sliced mushrooms, drained
1 3/4 cup (one 15-ounce can) Hunt's Tomato Sauce (or you can use
salsa)
1 teaspoon Italian Seasoning
3 cups cooked whole wheat noodles, rinsed and drained
1/4 cup shredded fat free or soy Cheddar cheese
1/4 cup shredded fat free or soy Mozzarella cheese

In a large skillet, sprayed with olive-oil-flavored cooking spray,
brown meat, onion and green pepper. Stir in mushrooms, tomato sauce,
Italian seasoning. Pour mixture into a slow cooker
sprayed with butter-flavored cooking spray. Spread noodles over meat
mixture. Layer cheddar and mozzarella cheeses evenly over the top.
Cover and cook on LOW for 6-8 hours/ Mix well before serving

4-6 boneless, skinless chicken breasts
1/4 cup melted butter or margarine
salt and pepper to taste
dried leaf thyme, to taste
1 clove garlic, minced
1 can cream of chicken soup
8 oz. cream cheese, cut into cubes (works well with low-fat
versions)
1/2 cup chicken stock
1 cup chopped onions
1 rib celery chopped

Place chicken in crockpot. Brush chicken with butter and sprinkle
with salt and pepper. Add herbs and remaining ingredients.

Cover and cook on low for 6 to 7 hours.

Pork Chops with Corn Stuffing

Pork Chops with Corn Stuffing

1 tbsp. oil
6 (4 oz.) boneless pork loin chops
(about ¾-inch thick)
1½ tsp. dried pork seasoning*
4 c. cornbread stuffing mix (gluten free)
½ c. chopped celery
¼ c. chopped onion
¼ tsp. dried sage leaves, crushed
1 can ready-to-serve chicken broth (14½ oz.)
1 can whole kernel corn with red and green peppers,
drained
1 egg, beaten

1. Heat oil in large skillet over medium heat until hot. Add pork
chops; cook until browned on both sides. Drain. Sprinkle pork with pork seasoning.

2. In large bowl, combine all remaining ingredients; mix well.

3. Spray inside of 3½ to 4-quart crock pot with nonstick cooking
spray. Spoon stuffing mixture into sprayed slow cooker. Arrange
browned pork chops in 2 layers over stuffing.

4. Cover; cook on low for 5 to 6 hours or until pork is no longer
pink in center.

Serves 6

A mix ¼ teaspoon each of seasoned salt, garlic powder, thyme leaves
and black pepper can be used if pork seasoning is not available.

KICKIN CHICKEN 8-10 hours

KICKIN CHICKEN

Ingredients

5 Frozen Chicken Breasts (can use fresh)
1 16 ounce jar Salsa Verde
2 cans Black Beans (I would think this would be small cans)
1 can Sweet Corn
1 can Diced Tomatoes with no salt
1 teaspoon Ground Cumin
1 small (3 oz) package of cream cheese
taco seasoning (optional for that extra little kick)

Directions

Place frozen chicken breasts or tenders in bottom of slow cooker. Add
remaining ingredients except cream cheese.

Cook on low for 8-10 hours. At this point I remove about 1/2 the
liquid because I like my sauce thick, like a stew. You can leave all
the liquid if you want a "soup". Add cream cheese, cook on warm
setting for 30 minutes, then stir.

This can be served over rice or wrapped in flour tortillas (not
included in nutritional info.)

One serving is 1/2 a breast. Serve over brown rice.

1 pound lean round steak, cut into pieces
2 1/2 cups green bell pepper, coarsely chopped
1/2 cup onion, chopped
3 cups raw potatoes, diced
1 (12 ounce) jar fat free beef gravy
1/4 teaspoon dried minced garlic

Spray crock pot with butter-flavored cooking spray. Add steak
pieces, green pepper, onion and potatoes and stir to combine.
Stir in gravy and garlic. Cover and cook on LOW for 6-8 hours.

Mix well before serving.

Makes 6 servings

Ingredients:

1 lb. boneless chicken breast, frozen
1 can 98% Fat-Free Cream of Mushroom soup
16 oz fat-free sour cream
1 pkg onion soup mix

Place frozen chicken breast on the bottom of crockpot. Mix other ingredients
together and pour over the chicken. Cook on low setting for 7 hours.
Stir sauce well before serving. Serve with rice, noodles or veggies


Crockpot Beef and Peppers 8 hours

Crock Pot Beef 'n Peppers

2 lb. lean round steak
2 green peppers, thinly sliced
2 tbsp. dried onions or ½ of a fresh onion finely chopped
1 c. beef broth
2 tbsp. low sodium soy sauce
½ tsp. ground ginger
1 clove garlic, minced
1 tsp. Worcestershire sauce

1. Cut the steak into serving size pieces. If you want you can brown the
meat in a small amount of hot oil before adding it to the crock pot.

2. Place the sliced pepper rings in the bottom of the crock pot,
reserving a few to place on top of meat.

3. Arrange the meat on top of the pepper being careful not to stack
one piece directly on top of another.

4. Mix all other ingredients and pour over the meat and peppers.

5. Cover and cook on low for 8 - 10 hours or on high for around 4 hours.

6. Serve with mashed potatoes and vegetables.

Cranberry Chicken-2 to 3 hours

  • 2-1/2 to 3 pounds chicken thighs and/or drumsticks, skinned (I make this leaner and use frozen chicken breasts - frozen don't dry out as they cook
  • 1 16-ounce can whole cranberry sauce
  • 2 tablespoons dry onion soup mix (look for reduced sodium)
  • 2 tablespoons quick-cooking tapioca
  • 3 cups hot cooked rice

directions

  1. Place chicken pieces in a 3-1/2- or 4-quart slow cooker. In a small bowl, stir together cranberry sauce, dry soup mix, and tapioca. Pour over chicken pieces.
  2. Cover; cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2-1/2 to 3 hours. Serve chicken and sauce over hot cooked rice. Makes 6 servings.

Apple and Onion Beef Pot Roast 6 hours

This recipe makes one of the best gravies I've ever tasted!

Ingredients

  • 1 (3 pound) boneless beef sirloin tip roast, cut in half
  • 1 cup water
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon reduced sodium soy sauce
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • 1 large tart apple, quartered
  • 1 large onion, sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1/8 teaspoon browning sauce

Directions

  1. In a large nonstick skillet coated with nonstick cooking spray, brown roast on all sides. Transfer to a 5-qt. slow cooker. Add water to the skillet, stirring to loosen any browned bits; pour over roast. Sprinkle with seasoned salt, soy sauce, Worcestershire sauce and garlic powder. Top with apple and onion. Cover and cook on low for 5-6 hours or until the meat is tender.
  2. Remove roast and onion; let stand for 15 minutes before slicing. Strain cooking liquid into a saucepan, discarding apple. Bring liquid to a boil; cook until reduced to 2 cups, about 15 minutes. Combine cornstarch and cold water until smooth; stir in browning sauce. Stir into cooking liquid. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over beef and onion.

Nutritional Analysis: One serving (3 ounces cooked beef with 3 tablespoons gravy) equals 173 calories, 6 g fat (2 g saturated fat), 69 mg cholesterol, 262 mg sodium, 4 g carbohydrate, trace fiber, 25 g protein. Diabetic Exchanges: 3 lean meat.

Creamy, Fruity Slow Cooker Oatmeal 6-8 hours

Creamy, Fruity Slow Cooker Oatmeal



4 servings

2 cups steel cut oats (work best, the rest cook too fast and you end up with a mess
5 cups water, or 2 cups milk and 3 cups water, or 5 cups fruit juice, or any combination you prefer
cinnamon (optional)
dried fruits, dates, raisins, cranberries, nuts coconut, etc. (optional)
1/2 cup bran or wheat germ (optional)

Put the oats and the water, along with anything else you want to add to the mix in the crock pot, turn on to low, and go to bed.

In the morning serve it with milk, cream, syrup, more butter, brown sugar, or whatever your family likes.

You can add the fruit in the morning if you like them a little chewier. You can also use canned crushed pineapple and the juice when you mix all the ingredients in the evening. Just dump the can of pineapple into a large measuring bowl (like the glass measuring bowl from Pampered Chef) and add enough water to make 6 cups.
