You Won't Believe it's Cauliflower Pizza Crust
1 cup cooked, riced cauliflower (I use fresh cauli florets, microwaved until tender; let cool then mash on a plate with a fork and measure)
1 beaten egg
1 cup reduced fat mozzarella cheese... See More
1/2 tsp basil
1 tsp oregano
2 tsp parsley
pizza or alfredo sauce ( I use Chef Boyardee brand pizza sauce; it has no sugar or you could make your own version)
healthy toppings of your choice, the more veggies the better
reduced fat mozzarella cheese
Preheat oven to 450 degrees farenheit. Spray a cookie sheet with non-stick spray.
In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan; I like mine pretty thin so it browns nicely. Sprinkle evenly with basil, oregano and parsley.
Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe) until as brown on the bottom as possible. Using a dark baking sheet helps but do grease it as recipe calls for.
Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
Place under a broiler at high heat just until cheese is melted.
