Potato Tomato Zucchini Pie

Mix together:
3 c. hash brown potatoes, either frozen or home made
1 beaten egg
3 TB. flour
1 c. diced onion
1 TB. parsley

Put in a greased deep dish pie plate

Bake this for 30 min. at 350 degrees

Then top with 3/4 c. grated cheese
2 cups thinly sliced zucchini(as I had yellow zucchini, the color changed, but not the taste)
2 c. thinly sliced tomatoes
1/2 cup. diced onion
3/4 cup grated cheese

Bake for 40 minutes more.
